送飯的餸


明天是馬拉松的日子,大家可知比賽前是要補充大量的澱粉質? 我不是跑的那一個,我不會大量進食那肥人的澱粉質。
有時候用心煮的都不比投其所好有用。
只要是有汁,有肉,濃味; 又或者唔健康, 都是比較捧場的餸~ 

燉牛腩
全瘦的牛腩燉了不好吃,惟有用半肥瘦的,出水燉好再隔走肉汁內的肥油再回鍋煮熱。燉牛腩可一次煮多一點,冷了後放入保鮮袋,薄薄一片平放冰箱,日後叮熱/加入許水煮熱,再加麵或烏冬, 是home made 的快餐。

另有我吃的菜;蝦乾燴翠玉瓜,10分鐘就攪定。最愛是翠玉瓜,易洗易切。將蝦乾切碎,用薑蒜起鑊,爆香蝦乾蓉,加入瓜,下調味,灒酒,煮一會就可。重點是瓜切薄一點就快熟。

Nachos 的秘密?


一個月前與Mr. Jujube 去Outback晚飯, 點了最愛的Nachos,侍應反問:「咩黎?」原來已在餐牌取消了。
回家之後不久,Mr. 念念不忘,我就做一個home made 方便版。

牛油果因氧化的關系會變黑,如何做到”嫩綠“的牛油果醬?
就是把其核放回醬中,再加點青檸汁和一點點sour cream,就又靚又好吃!
沒有焗爐,只有將粟米片和刨碎的cheddar cheese在耐熱的大pan烤,找出M﹠S的salsa 醬,攪拈!

Merry Christmas Brunch


今年聖誕好有氣氛, 因為實在太凍了!

平安夜鮮有的未有與Mr. Jujube共渡,因去了中學好友的婚禮! 時間過得太快,轉眼已畢業N年,中學同學再聚,份外親切。聖誕日早上特意攪點新意, Egg Benedict, 這是與Mr. Jujube Bristol 開會在酒店吃過之後超想吃,而香港又未見做得好的。

最重要是蛋!

因為要半生熟,我買了馬來西亞的消毒過的靚靚蛋~
要整poached egg, 可於水加入少許白醋和鹽,蛋白會凝固得快一點,出來的效果會圓圓的,滑滑的。

聖誕日沒有出街人迫人,只是兩口子在家,Mr. Jujube工作,我煎扒,呷呷白酒,溫溫馨馨就過了。

Lovely November


11月一瞬間就過去了,原來我足足病了一個月; 身體健康好重要。

11月25日是 Mr. Jujube 的生日,我做了一個 Lemon Cheese Cake給他。原來現在超級市場沒有賣 President 的 double ream 了,只有 whipping cream, 味道是淡了一點, 很懷念英國超濃口的 double cream。

生日一年一次,肥都不怕!現在街買的蛋糕都愈來愈淡味,材料愈來愈貴吧。不過這蛋糕用了$100,在Cova 買個cake 都是$17X。(買好過?一定好吃又乾手淨腳)這蛋糕是我改良,少糖,主要食芝士的濃郁奶香及檸檬的清香。

材料
1磚 cream cheese
1/4 杯黃糖
1 茶匙魚膠粉
1個大檸檬
90 ml whipping cream

餅底
3﹣4塊消化餅
無鹽牛油75g

1)消化餅打碎,加入已溶化牛油,用刮刀輕按
混合物,鋪好餅底在蛋糕模內,放入雪櫃雪硬
2)   cream cheese 在室溫待軟,切方丁方便一會打鬆
3)刨檸檬皮,切碎
4)檸檬榨汁
5)黃糖加少許開水煮溶,加入檸汁,一半檸檬皮,低溫煮開
6)用攪拌機泡打cream cheese 至鬆軟
7)再在另一乾淨大碗將 whipping cream打至 soft peak
8)將魚膠粉加入煮熱的檸檬醬,再續一拌入cream cheese,攪至幼滑
9)   小心將cream cheese拌入 (fold in) 已發好的whipping cream, 此時應續少加入cream cheese,盡量保持蛋糕混合物內的空氣
10)蛋糕混合物倒入已有餅底的蛋糕模,
放入雪櫃雪至少2小時,上碟時灑上檸檬皮裝飾

脫模時可用風筒吹熱蛋糕模外圈,使蛋糕容易滑出及更美觀。

Beef Curry

昨日的晚餐,牛腩是老公的favourite,日本南瓜是給我自己的。咖喱南瓜味道很夾,可再試;試用從Sogo買回來的橫濱咖喱,Orz,加了之後有點油,努力的瓢;加上青瓜沙律,要健康一點。

今日發覺有首飾配件來貨的數目不對,因收貨時是農曆新年,沒有對單;真笨!

三月了,時間真快。
今天是良久第一次覺得「熱」。收衫時覺得熱,炆牛腩時有點悶。
你試過吃不下自己煮的菜嗎? 對了幾個鐘的牛腩。。。沒胃口。

Long time no see :D

Dusting dusting :)
I have been away from the blog world for some time as I've moved to Edinburgh for this summer. It is such a pretty city. I am here with my hubby. Such that I do need some "projects" to be done cheap and at home.

First I have attempted to bake! Yes, a cooking which needs accuracy and measurement. (which I do not have ) And I have bought a glossy magazine, Glamour, to kill time. This issue a Benefit Bad Gal eye liner is included. GBP2 for such, a hot deal!!!

I have followed Rachel Allen's recipe which is super easy and tasty! (I do accomplish it without an electric mixer!)

More vege, less carbs

I recently felt exhausted and depressed very often. (Or most of my life :P) Previously doctor has advised me to intake more food in all terms and sodium. I am a lazy cook such that I had have lots of fast food meals to fulfill doctor's wish. Hamburgers got lots of sodium!

Things are better. I feel less dizzy. But there is another problem, I am puffy and lack of energy. So I change my diet again... a revolutionary one. I try my best to prepare my meal every day. It is a challenge when you are alone at home. Meals are not the top priority. Preparing a one-person portion takes lots of work.

For my health sake, I am doing it, hopefully, for long term. I will be a housewife (maybe) the rest of my life, I cannot have fast food forever.

Buying food is so much easier. (That is why you have to pay more!) You can just eat and then do other things. I discover I have been cooking and washing the whole day as following,

Breakfast / Lunch
Fried egg and toast, a cup of tea - 10 mins
Eat - 10 mins
Washing dishes - 10 mins

Snack
Cut an orange - 3 mins
Eat it - 4 mins
Wash again - 5 mins

Dinner
Prepare and roasted turkey - 45mins
Prepare salad, cut tomato / onion and smash avocado - 20 mins
Serve and eat - 30mins
Wash again!!!! - 25mins

Very often, I think I am not that full after the dishing...

Dinner for two






















Not sure if you are bored with the same style of photos yet. It was our dinner last night. Yes salad again with home made dressing. The Pizza Express balsamic vinegar dressing seems not too match with the roman cabbage. To make the meal filling, I've added some smoked salmon.
Here is a how-to for the home made Italian salad dressing.
lime juice (freshly squeezed from a lime), 1 clove of garlic, 2 table spoons of cherry tomato juice (gained from the cheery tomato), a dash of mixed herb, oliver oil, salt and pepper

I have soaked the sliced onion into the dressing before we went jogging. 30 minutes of jogging, back home take a shower, shake well and enjoy!

Salad for dinner






















I decided to lead a healthier diet. That is more fresh vege and good quality of protein. It is not easy to sustain as it costs time and effort. Last Sunday, we had salad for dinner.

I have prepared the turkey breast on the Saturday night. The turkey was bought from a wholesaler which located nearby our home. I just requested the giant turkey to be cut into 3 portion. Turkey is a good source of protein.

I have marinated the de-frozened bird with rosemary, mixed italian herbs, a clove of garlic and dash of oliver oil for 20 minutes. Then I sealed the bird in high heat and then slow cooked for 40 minutes. Slice them once they are cool down.

The best part, I can store the bird in the freezer and served as ham for sandwiches, salad, and snack. Though... C ate them all quickly :)

Yummy Scones



I've watched Martha Stewart's Today Show and tempted to make some scones! My hands were inched and quickly made some for my tea and C's breakfast tomorrow. Of course, jam making is a must to go with these freshly "baked" scones!
Yes, it is specially "baked" since I do not have an oven at home. I simply put some foil on my non-sticky heavy duty pan with saucepan and "bake" it! The result?! Fab*

The TV meal

I am not feeling energetic today. It is likely due to my neighbour is having a renovation which drilling and banging all day long. Luckily, I have managed to wrap up all the delivery and prepare a quick dinner and have it during our TV craze of 宮心計

I have added an egg to thicken the curry sauce which matches the shrimps and served with rice (mixed with whole grain rice). We are trying to have whole grain rice lately for a better diet.

Homemade curry sauce is easy. Here is for 2 persons.
  1. Sortie the 1/3 onion (I like to add some coriander)
  2. Add in 1 table spoon of mixed curry powder (I used Koon Nam Wah)
  3. In go the pan fried shrimps / meat
  4. Slow cook for at least 30 mins
  5. Add in coconut milk and cook until the sauce is thicken
  6. Salt and pepper
Done!

Blueberry Jam



One night, I cannot sleep and feel like cooking. So I snagged a little box of blueberry out from the fridge and made some jam. It feels so good every time I make jam. It is relaxing and joyful. Fruity sweetness just fill up your room. It makes me happier!

Moreover, homemade jam is just healthier with less preservatives.


1 portion of fruit + 1 portion of sugar + time and love = Yummy JAM
